Chinese Chicken & Broccoli

One of my all time favorite things to eat out (besides Mexican) is Chinese food..specifically, I like Chinese take out. ha ha! My favorite Chinese restaurant is just down the street from my house and their take out portions are massive, which means that we can get about 3 meals out of one dinner entree. That makes it more worth it to me when thinking about the cost of eating out, but...I still do like to find alternatives to take care of that chiney-takey-outey craving I get a couple of times a month.

I normally make a Beef and Broccoli Stir-fry and spice it up a bit, but more recently decided to try to make it with chicken instead and man, it didn't disappoint!  This has turned into one of my go-to meals when I didn't menu-plan because I always seem to have the ingredients on hand. After tweaking it a couple of times, I think it is ready to share...it's definitely what I would classify as a 30 minute meal that is super easy and super tasty.

Chinese Chicken & Broccoli
Serves 4


Ingredients:
2 chicken breasts, boneless and skinless
1 tablespoon arrowroot powder or cornstarch
1 tablespoon dry white wine or low sodium chicken stock
1/2 teaspoon salt (eyeball it according to taste)
1/4 teaspoon pepper(eyeball it according to taste)
1 large bunch of fresh broccoli florets or 1 lb frozen broccoli florets
3 tablespoons extra virgin olive oil
1 garlic clove, minced
2 tablespoons low sodium soy sauce
2 tablespoons oyster sauce
1/3 cup low sodium chicken stock
1 teaspoon sugar

Directions:
1. Cut chicken into small bite size pieces or slice it across the grain into strips about 1/4 inch thick. In a bowl, toss the chicken with the cornstarch, sherry, salt, and pepper. Make sure to coat it evenly and set aside for 10 to 15 minutes.

2. While the chicken is resting, steam the broccoli until it is just about cooked all the way through. You can use a steamer or use any other method of cooking your broccoli that you are comfortable with. You just don't want to overcook it.

3. In a small bowl, pre-mix the soy sauce, oyster sauce, chicken stock and sugar.

4. In a wok, heat oil over high heat for about a minute. Add garlic cook for about 30 seconds. Add the chicken and stir-fry until it is mostly white and opaque, about 3 - 4 minutes. Add the sauce mixture and let cook for about 1-2 minutes more until the chicken is cooked through then add the broccoli and continue cooking until it is tender and heated through, about 2 to 3 minutes.

5. Serve with rice. (My favorite so far has been Jasmine Rice.)
